De Meikermis, in 1855 in de plaats gekomen van voorjaars- en najaarskermis, en vanaf 1886 de kermis tijdens Gronings Ontzet, zijn onlosmakelijk verbonden met de stad Groningen. Veel veranderde. Carrousels worden niet meer door stoom aangedreven en reizende schouwburgen, variététheaters en bioscopen zijn verdwenen. Mensen met sterk afwijkende lichaamsbouw worden niet meer blootgesteld aan nieuwsgierige blikken van kermisgangers. Exploitanten van vlooienspelen sloten hun theaters door gebrek aan op mens levende vlooien. Wild vermaak, schiettenten, spelletjes en kermisgebak bleven. Stadjers moesten tijdens epidemieën en in de Eerste Wereldoorlog de stad uit voor kermisvertier. Dwingende maatregelen van de Duitse bezetter beperkten het aantal kermissen in de Tweede Oorlog tot drie kleinschalige evenementen. Henk Werk beschrijft het langdurige gevecht van drankbestrijders en protestanten tegen de in hun ogen zedenbedervende kermis. In 1921 besloot de gemeenteraad tot afschaffing, maar kwam na veel heibel in de raad en weerstand onder de bevolking snel op haar schreden terug. Poffertjes, oliebollen en wafels zijn eeuwenoud. Scriblita, vermoedelijk de voorloper van de beignet, werd reeds beschreven voor de jaartelling.
